This week i'm rewatching season 3 and episode 18 & 19 are about indian spirits & chinese ghosts, and both are pretty good episodes. I thought it was funny that they made two in a row...like it was a conscious decision to go "so...hey we could do the same thing with chinese sorta?".

Every show is written on a semi-weekly basis. If the writers aren't working on more than one show, they can plan out season-long or series-long arcs and have a rough outline for those episodes when the series picks back up.

That's why you have a whole lot of filler and then amazing episodes in a row. Because they got to a point where they don't need as much filler, so they can put those outlines to work.

That depends on if the show has separate writing teams. Usually, there's two teams, and they both work on one to two episodes at a time, writing dialogue and outlining scenes.

If the show has a main writing team, you can bet they'll be working on important episodes rather than fillers while the other writers have to do some juggling to make the deadline.

Since they start shooting a couple of weeks before the episode airs, they have 1-2 weeks of writing before shooting every episode after the first one airs. That's plenty of time to outline plot structure and then have all hands on deck for every episode rather than splitting the team.
