Because the Battle Droids were cute and funny for the dumb 4-year old babies in the audience and the Super Battle Droids were powerful and strong for the dumb 9-year old babies in the audience.
And the Destroyer Droids are epic and badass for the dumb 32-year old babies in the audience.

They probably just still had regular battle droids left over, so like why not use them until they're all destroyed.
At least as far as in combat roles. There are also pilots and engineers and things, and I'm gonna assume that those were to stay regular battle droids, which may also have contributed to them still using them, maybe the ones that weren't meant specifically for combat found themselves in combat situations.

What made the super battle droids better than the regular droids? They seem less useful since they go down just as easily as the regular droids but they have their weapon built into their arms which makes them a lot less versatile.

Super Battle Droids are infantry, they're heavy and can throw a lot of firepower. They're main use is for being used as heavy front line attackers.
Battle Droids are more versatile and their chassis can be retrofitted to any role they're needed as(Engineers, Pilots, etc...). That's why you see them fulfilling every type of role during the Clone Wars and I assume also because they're cheaper to produce.
