They were less effective in space than lasers, armor could resist the power behind the bullets (you have to realize that Stormtrooper armor is extremely strong and that blasters have unbelievable power) and, most of all, Jedi could easily use the force to mess with the bullets (something they can't do with lasers) when the Jedi were common, so regular guns stopped being used.
