That's probably because he goes through the best character arc. From whiny farmboy to impulsive clingy friend to calm, collected Jedi.
Anakin was what a Jedi should not be. Luke was what a Jedi should be. Even moreso than his own mentors, who seemed to assume the only way to overcome Vader was to kill him.
Was also a pretty decent pilot, though we don't get to see it much after Hoth.
