No one historian comes to mind for Ancient Greece, sorry. However (and some may disagree), I minored in the Classics, and I personally found the Greek writings to be far easier to just dive into.

Pick up Thucydides or Herodotus if you're interested in the military side of things. Just jump in, and they're easily accessible and free. The plays are always good fun too, but I always found the philosphy and guys like Plato extremely dull.

Sheev and Vader were pretty evil. Thrawn, meanwhile, is a fairly benign villain.
Sure, he kicks the New Republic's ass at every opportunity, but he shows restraint with both his enemies and his own forces.

Honestly, by the end of the third book, I was hoping Thrawn would win. When you compare him to the bickering and bureaucratic New Republic, and bear in mind the oncoming Vong invasion, it's clear that a galaxy under his direction would have been a better place.

the jedi are not formally apart of the political apparatus of the republic. they get involved politically and consult and even lead armies but they are essentially a group of private citizens.

Again I haven't seen any evidence that says they aren't. We can't look at the Republic's constitution and know for certain. Pretty much all we can infer from the movies is that they are agents of the state and every description of the Jedi one reads in the fiction says "they served the Old Republic" or something along those lines. Besides, it would be silly if the Jedi had no power whatsoever to detain criminals.

The Jedi had been investigating the senate since AOTC, looking for the sith lord who was corrupting everybody. If you believe the EU sources they had already found lots of evidence there was a sith in the senate playing both sides of the war.
