With Sheev, I think it may have been a combination of having to strain his force abilities to keep Mace Windu from chopping him, as well as the fact that he was tapping so heavily into the dark side. As we've seen with the yellow Sith eyes, just tapping into the dark side can physically alter a person's appearance, and Sheev is the most extreme example of it. The human body is not meant to channel that much evil energy, and the fact that it was looping back into him is probably what caused him to scar so horrifically.
Just getting zapped with lightning is not enough to scar someone like that without killing them, and just using the dark side that heavily would probably not scar someone either.

It's awesome, it starts off with Plagueis killing his own master and then he proceeds to become a perfect puppet master since his alter ego is a high ranking member of the banking clan.
He meets Sheev when he's 17 and that's why Sheev is so powerful. He had the raw talent in the force plus the sociopathic tendencies a sith would need. Sheev was apprenticed to him for almost 50 years and learned all kinds of cool shit.
There's a part where Plagueis tells Sheev about force lightning and tells him that only powerful sith can do it and that being on the receiving end of it can and will fuck you up, I.E. disfigure you.
Too bad the book isn't canon as it was released in 2012 but to anyone that is interested in Sheev it's a great read. Or do what I did and download the audio book.

Yes Mace legitimately did beat Sheev but, Sheev knew Anakin would come to save him. Sheev's power in the dark side was so great that he could see clearly a great many things.
He knew Mace's power was without test and he knew Anakin would be placed into a desperate situation and would give in to the dark side.

Sheev needed Anakin to act. With his face fucked up and his life seemingly in the balance, Anakin would be forced to do something. Mace was a dark side user who prettied it up with Jedi zen mental jogging to use as much power as he wanted without falling all the way.
So Sheev's darkness would only serve to strengthen Mace.
Mace saw Sheev's shatter point and it was Anakin. Ironically, Anakin was also his shatter point.
