Because audiences subconsciously expect characters to fit certain archetypes which define various aspects of the human psyche, and there are only so many ways that a finite set of characters copied from archetypal templates can interact without breaking their moulds and thereby alienating the majority of viewers.

Turning the "wise old mentor" into a sleazy lech or the "damsel in distress" into a butch chain-smoker will usually lead to a crash-and-burn at the box office, except in circumstances where the marketing for the movie explicitly indicates that the tropes are being deliberately subverted. Even then, such a movie could very rarely expect to match the financial success of a colour-by-numbers "hero's journey" blockbuster, because there are certain traditions in storytelling that have existed since the dawn of civilisation, and that kind of thing tends to be bankable.
