You seem to be forgetting, the anthology films are going to have a structure like the MCU, so they'll be in phases. Phase 1 is pre-ANH stuff. Phase 2 could be a mix of stuff between ANH and ESB and ESB and RotJ. TFA also has a post credits sequence.

I was under the assumption that Ren was the only one who had a lightsaber because that technology and knowledge had been more or less lost to time, with Kylo Ren being the leader of the Knights because he was able to build one of his own.
