There's Tombstone, The Quick and The Dead, Young Guns, Unforgiven, Quigley Down Under, Legends of the Fall.
2000's up there's Open Range, Appaloosa, The Alamo, Seraphim Falls, and uh...Hidalgo I guess?
Two decent ones that came out this year: Slow West and Bone Tomahawk.

I'd look into Australian westerns, it sounds odd but the harsh landscape means that the wild west still exists there.
They can make some great movies.
