There's a lot of iconic characters that don't really have a lot of screen time or really do anything. That was what Lucas was always good at, developing the atmosphere and world that you experienced.
The mystery, the brilliant costume design, is what lends to the popularity of Boba Fett. The desire to learn more about this character drove fans nuts. And this is why when the prequels came out, and it explained Boba's origins, NOBODY was happy about it.

Not really. Before the prequels I think most people speculated that they were Wookie scalps. Most likely, Lucas hadn't completely figured out Boba's origins yet, and they were just the scalps of something - fill in the blank.

It's not canon anymore, but it's only a matter of time until it's made canon again. Disney KNOWS Boba Fett is one of the most popular characters in the entire franchise and it's all but certain the third spinoff is going to be a Boba Fett movie.

Boba (along with Maul, Grevious, Dooku, Jango, Qui-Gon and basically everyone that isn't a main character) wouldn't have any personality or history unless they pulled some strings and wrote in the characters coming back OR gave them some history.
Sometimes the mystery is what gives a character, setting or event the charm. I understand that. Personally though I would rather see the stories that could be told rather than not make any at all.
