Like when we found out he was immune to reality changes during the Jonathan episode. And how they fight and beat him was awesome.

Ensouled Angel and Spike aren't their human selves right? I mean the human they were died and a demon just has their memories. The demon doesn't leave when the soul comes in so I guess an important question is,did they get any soul back or their soul or does it not matter?

They contradict themselves several times on that.
Harmony, for example stays almost identical to her human self, but with an evil streak that comes up occasionally. She's capable of controlling herself for long periods though, like the first time she visits Cordelia in LA.
Vampires aren't supposed to be able to love without souls, but because Spike was a soppy romantic as a human, his vampire self is capable of some form of love.
I think it's a mix of vampire/human host's personality, and the presence or lack of a soul can tip control either way.

Angel and Spike seem to be quite different on this. Possibly because Spike choose to get his soul and Angelus had it forced upon him. Possibly becuase Angel is a total nut.
Angel has a full on split personality now. Spike would certainly not react the same, and was largely similar after regaining his soul. Losing his soul again would hit him pretty hard for sure, but he would never be as bad as Angel.

Well the vampire form of the person is more of what people wish they were. I think Angel is disgusted with what he really wanted and so Angel is so different from Angelus.
Spike was a loser, so even ensouled spike likes cool him. Or at least souled Spike uses the tough guy act for the same reasons the unsouled vampire did, because the alternative is being a pussy.
Harmony might just be so superficial that she was all she wanted to be already and so her vampire is just an evil her.
