In fairness, I think the zombie logic on TWD is that they have no human limitations. Like, we can only use a certain percent of our muscles, cause it will sprain and tear things if we go hardcore. Zombies don't have that, so they go 100% muscle expenditure. Making them a lot stronger, although not built to last.

I feel like they have developed exceptional skills over the course of the series, though. I think a lot of menial work isn't shown because it's not interesting. the group does a lot of menial sustenance stuff that we don't see. if we saw it, everyone would complain about how boring it was and how it was filler.
the show is uneven in terms of character development. when they do it right, its not bad, but they don't spend enough time on it. and if we had a bunch of time showing the group's survival skills it could be perceived as boring since there's no character development or action. i don't disagree with you, but i do allow a little leeway when it comes to their ability to achieve a caloric surplus 'off page'.
