Actually the lore of the Eric Andre show is super interesting. He's stated, although I'm not sure in interviews just in live shows, that the lore behind it is a failing comedian who gets the opportunity to host a talk show in a pretty shady manor and he realises that he's stuck in the show and can do whatever he really wants in attempts to get it canceled so he can return to real life. From memory he said he's like 5 years in being stuck at this point.

The real reason is that he's stuck in purgatory in an endless cycle. That's why every time he destroys the set, it just gets replaced. Hannibal is a demon put there to make things run as smoothly as possible, which is why he directs Eric to go do the monologue and call out the guests.
