Nah, he didn't settle down with Moore. The movie's more about the unrealistic expectations that pornography creates in people and the protagonist lusting after the sort of perfect fuck. He starts dating a domineering woman who looks like a porn star but doesn't fuck like one, so he's still unsatisfied.
Moore's character is just rebounding with him after her husband's death and acts as a catalyst for him to stop trying to force fantasies and live in the moment with relationships. The movie's pretty clear in the end that they're not in love with one another, they're just mutually using one another to heal.
