Going on a 7 night Western Carribean cruise around Memorial Day (Mexico, Belize, Honduras, and Grand Cayman)
1st cruise.
Questions I have are:
A. Alcohol plan or pay as you go
B. Excursions through ship, buy on shore, or venture on own?
Also cruise general. Share tips and stories and what not.

How much do you drink? If it is "a whole Hell of a lot," then buy the plan -- but the Plan is designed to make money for the ship, not for you to save money: most people drink less than the break even point. The advantage, though, is that you don;t have to worry about a budget-killing surprise at the end.

The couple of times I've cruised, I booked shore excursions online in the weeks before traveling, or just wandered. If you DO book once on board, do so early or the first choices may be booked solid.
Experience cruiser here. I've been on about 50-60 cruises since I was born (I was one of those babies you see on cruise ships).

I'd just add that soda plans might be something you want to consider unless you really like unsweetened iced tea....and that I highly recommend booking excursions at every port of call. They're reasonably priced and offer the best of wherever you are.
