I'm from Newcastle, so feel free to ask away. The nightlife is very good, and there are lots of great pubs. The area of the river is really pretty, with some nice bridges and some of the architecture in the centre is nice, especially on Grey Street. If it's your thing, there's an art gallery called The Baltic which has a lot of modern stuff (sometimes it's good, sometimes it's shit, but it's worth a visit). What else do you like, or what else would you like to know?

A decent rock/metal bar, that youd get local acts on a weekend, maybe with pool tables, and a friendly vibe...
Also any other interesting late night spots, as a couple we wont be looking for anything hectic...
We have a long day before we fly back on the Sunday night, and were thinking of going for a hike/trip to a nice naturally scenic spot, a forest or hilly place out of the city, if its do-able, transport wise...
Other than that... anything fun you could kill a few hours at like an aquatic centre, mini golf or something like that

Try trillions rock bar in the city centre. Or the cluny just outside it centre for music. There's a sea life Centre in Tynemouth which is ok, will kill an hour or so but Tynemouth is probably worth a visit like. U can get there on the metro from city centre. There's also a nice cafe down on the beach called crusos.
