Im looking to go to the states for about a month at the end of this year / start of 2017. I'm looking for somewhere thats not to touristy with relatively cheap lift passes and accommodation. What are some good mountains / areas that would suit? Where are the local hangouts?

I think this is your problem. If it's a good place to ski, it's going to be popular. If it isn't so good, then it won't be popular but then why would you want to go? My advice is to plan your trip based on time, and then destination -- usually the first week after the New Year holiday has good deals at major resorts. So, if I were you I'd look at packages for the week of Jan. 9, 2017, maybe at Copper Mountain (Colorado) or Sun Valley (Idaho). Whistler (in British Columbia) might also be worth a look.
