Glynda can just squeeze your heart or chest until you collapse then hit your head with ruks until it cracks like an egg. Pull the pins off your dust grenades. Or just wrench things like a parking brake mid escape attempt. And pretty much everything else 8 decades of tk bullshit.
Flynt lets him make 3 durable copies. No matter how good you are, unless you got boss AoE skills or speed you can just get encircled and ganked.
Emerald and Neo's amazing illusions are exceptionally broken.
And let's not forget the hereditary Schnee, you keep what you kill which is apparently not limited to beings so you can make the strongest mecha and any of them can pop them out wherever.

Also remember that this isn't taking place in a frontier town. They're in a kingdom supported by shitty terrain, walls, hunters, and dudes/droids on the wall with guns. "Professor Arc" is one of my favourites, "A Knight, A Champion, A Rose" and its sequel "The Songs We'd Sing" are great, a bit more mature take on the story, "Telepathy" is pretty fun, "Nora's Arc" is a bomb, "Resurgence" is pretty good if you want post-V3 story, "Immortal" for the pure insanity and 'Goddess' Pyrrha...

Innocence is amazing, although it takes a very dark turn halfway through the first book. The Ozpin Files is just hilarious, it's a must-read. The Games We Play if you want a rationalist approach, Catnip+The Ladybug Diary for dorky fluff, The Dark & The Light if you like angsty scifi, Millennial Rose if you like the regular variety. Broken Statues and Rush for romantic drama. Oh, and Remnant's Reclaimer is great if you haven't read it before.
