Quartz is more of an umbrella race for gems. Jasper and Amethyst are to "Quartz" as German and Irish are to "White". What's the most common feature for white people? Straight hair, light skin. Common features for Quartz (as shown by Amy, generic hologram Amethyst, Jasper, and Rose) would be Dick-sucking lips, big hair, and huge body. Amy was a defect, explaining her size.

Also, Pearls seem designed specifically to suit their diamond, or whoever they originally serve, so I'm going to go on a limb and say that Pearls are more of a 'custom order' gem instead of a 'mass-produced' gem like Ruby. Sapphire might fall under the same lane as Pearl as well, since she's a rare gem. That being said, I think because Peridot has to describe her facet number and all that crap, she's mass-produced, and therefore, has the same look as most other Peridots...
The only difference COULD be the equipment they wear. Maybe some have more than just limb-extenders, and maybe some have less, since they are clearly not born with it, and it's obviously not a gem-construct, otherwise Peri would have just made another set. Who knows... Still, I think most if not all Peridots are very similar visually.
Here's a question... do all gems have the same 'construct' weapons? Ruby and her gauntlet, and Amethyst with her whip would be two examples. The only other Amethyst that we know ever existed wieded an axe, and left it after dying. Does that mean that specific Amethyst still had a whip to use, but just never used it? They classify based on that, but it's not the cuts and facets we know when thinking gems.

The term "Facet" seems to be one of planetary location. The Prime Kindergarten was in Facet Five and the Beta Kindergarten was in Facet Nine.
Peridot's Facet was more complicated than that, so it likely also includes some kind of designation of planet along with planet location.
Cut, likewise, will probably be some kind of birth date/order designation within that kindergarten.

Pearls likely DO look all the same like Rubies, they just have different hair/clothing based on the desires of their masters.
They almost certainly all have white skin actually. Blue Pearl was just blue cause of the flashback's style while Yellow Pearl looked yellow because of the massive yellow light flooding in from the communicator (similar to how lighting dramatically changes our Pearl's color at times).
They also seem to use the same voice actor among them like the rubies.
Quartz, however, are clearly different. While their builds are roughly the same, they have different skin tone, some different hair, and most importantly, different voices.
Though, that really begs the question of whether or not different Quartz are allowed to fuse for battle. I'd imagine not really, that they'd instead be meant to not fuse since they're already more powerful/unique.
But then we got stuff like the fuckhuge quartz from Pearl's holo-flashback that seemed to be a same-Quartz fusion.

Firstly, the Flashback giant quartz used a clearly different giant axe than the one they found at the battlefield.
Second, as that anon pointed out, the battlefield axe was likely NOT a gem construct as it remained after all this time. It was an actually forged weapon.
Third, we don't know if that flashback quartz nor the battlefield axe's weilder was an amethyst. It could have just as easily been some other purple gem (maybe there's things even above Quartz, considering Rubies are low level soldiers/grunts and they aren't quartz at all).
Also, I'm still sticking by the idea that the war led to the DISCOVERY of construct weapons. Otherwise, the lack of any weapons during The Answer outside of clearly forged swords Pearl had is very odd.

I've never seen a gem change any aspect of their color, though. That's the one thing they're born and they die with, meaning they were born with that yellow/blue/dumbass pastel color scheme in mind. And again, Quartz is like an umbrella category, and the individual gems in it have their differences. Jaspers are elite warriors, for instance. Only used in special cases, like escorting, protecting, or doing a sizable amount of damage to an enemy force. They're valuable and thus more powerful, and smaller in number. Amethyst is an infantry unit. Powerful, effective, and cheap. They're pretty disposable, I'd guess, seeing as how Amethyst is one of the most common types of gem... Rose Quartz is a rare type of Quartz as well, which would explain why there may only be one of them in SU. They don't differ in their respective gem, but they differ from gem to gem, while retaining most of their notable features.

Garnet has drastically changed her color scheme over various iterations, both in hair and skin tone. Then again, she's a fusion so could be different.
They can at least change their clothes at will, as evident from Pearl's and Amethysts reforming with different/inverted colors.
The hair being different is something we haven't seen yet, but I wouldn't be surprised if that's the case with Pearls just to match the design their master wants.

And, going off what you seem to think about Gems not being able to change their color scheme, she can't be White's Pearl cause her hair is canonically pink. Everything about her is pink.

Garnet can change color because she is a fusion of blue and red.
As they learn and grow as an (individual) team the colors mesh better and become more of a purple.
It's pretty self apparent on Sugilite and Opal too.
Sugilite is mostly controlled by Amethyst and maybe Ruby. So she's dark purple with black.
Opal is mostly Pearl so she has very little of Amethyst's violet mixed in and is very graceful.
A showing of Amethyst holding back her personality to stay fused as far as I see it.

Why White Diamond though?
I don't get why no one considers she could have been either Pink Diamonds or just belonged to some high up Gem under Pink.
Frankly, my headcanon is that she was the latter there, just a regular Pearl, not some Diamond's Pearl, under the Pink Faction, that Rose saw during her time under Pink being abused or something. Then, when whatever happened to Pink happened, Rose swept the Pearl away from it all and started their rebellion.
