Undertale isn't a "bad" game, really, it just gets a lot more credit than it's due.
It's kind of quirky and interesting, and it's fun enough if you enjoyed any of the Mother games or similar weird old-school JRPGs, but don't expect it to be the best game you've ever played like so many people online are so vocally asserting, and don't expect to see anything in it that's never been done before.
The hype and critical acclaim honestly came completely out of nowhere, and even if I enjoyed the game for what it was, it honestly doesn't deserve most of the praise it's getting.

Toby's problem is that he's not very good at making games so he goes minimalist. Halloween Hack was the same quality seen in a Doom joke WAD like Mock 2: The Speed of Stupid, but passed off as serious. Undertale followed Earthbound's method of vaguely explaining things, to try and make people think there was a deep hidden meaning, while almost ripping the plot and message off from the old Genesis RPG Crusader of Centy.
I mean, there are decent "deliberate retro" pixel games that have lots of effort and thought put into them, like The Last Door... then there are the ones that are pixel games because the artist is too lazy to do anything other than MS paint. Undertale doesn't even look good. It would be barely acceptable if it were on the ZX Spectrum.
We need more Undertale stuff like a hole in the head.

The D-arts Pokemon were more of a case of Bandai not giving a shit because they knew people would rabidly gobble up articulated Pokemon regardless of quality. The character designs in Undertale could totally be made into good-looking posable figures with a bit of creativity. The Revoltech Jack Skellington comes to mind for Papyrus's limbs, for example. Although despite what its fans would like to believe, the game's never gonna get big enough to get decent figures.

The Toriel plush ended up being a LOT cuter irl than it looked in the previews. I bought it out of principle because Toriel is great and any quality plush of her would be nice to have, but since I got it it's kind of hard to believe I ever even disliked how it looked.
I think there'll be more fangamer stuff in time, especially with the re-burst of popularity form the whispered-about Nintendo ports, and probably a little bit even later than that since I'd say it's probably their best selling product line and the game will probably have a long-term dedicated fanbase of Earthbound-style hangers-on (myself included) even after all the rabble has washed away. I can't say it'll be too much or too exciting, but I wouldn't be surprised to see, say, actual high quality Papyrus and Mettaton action figures at some point, and more plushes (Temmie, Annoying Dog/Toby, and possibly Asriel once enough time has passed that it's not considered too spoilery.... though they have that megalovania shirt, so maybe not long at all).
