I changed up the tower mixel to have better teeth, banners, and a little watchman on top. Used the remaining parts to build a catapult with adjustable stabilizers on the side.

Hey guys. I have a question about the Power Functions IR Reciever. I know it has a 30' range, but my questions is, if I use an XL motor for my RC's Rear Wheel Drive, and an M motor for it's steering, can I control the motors separately with the two different joysticks on the small IR Remote? Or do I need to get on seperate IR Reciever for eac motor in which case? Also in that sense, I want to build an RC boat using two L motors. Can I control those with the seperate joysticks on the small controller with one Reciever, or will I need two receivers there, too?

Yes, that's the intention. Why would you need two receivers or remotes for just two motors?
Of note is that the IR Reciever has two outputs for two sets of motors, but like the old 9V parts before them the plugs for the motors can be stacked, letting them be controlled in tandem. This means, for example, that you can have two drive motors and one steering motor.
If you wanted to control three motors individually (e.g. primitive crane), however, then you'd need a second receiver. Do be careful as receiver power output can also be limited by battery box power or number of attached motors.
The minimum of PF parts for a simple RC car would be any battery box, any two motors, the IR receiver, and the remote.

I think I sold off my LEGO stuff around 1999/2000. I was like, 16 at the time and half way through highschool, and video games and stuff were more cool and more important to me at that time.

There's about 25 pieces on that set, and half of them are used for the tires. Most of the other ones are the kind of large pieces that 4 Juniors gets hated for, save for those 1x3 slopes on the back.

1990s-early 2000s were when the first era of set designers started retiring, so LEGO hired a load of fresh architects and art students to replace them.
