Like any other 3D puzzle ever, pieces should fit between them in a complex way that gives them stability. In this case, the last piece (the eye) should have a locking mechanism that makes it click into place, to remove it you should need to push a hidden button (the eye pupil, for example) with a toothpick to unlock the mechanism.
Designing it can be tricky, but it's not something impossible at all.
