you can definitely blame processed foods for people being fatter, since it makes foods so much easier and cheaper to be produced. Plus, it filters out stuff like fiber, which would slow down overeating and make shitting easier (less bowel cancer that way too).
Still, there's no way it would change the way humans store fat, considering humans have triillions of different variations of storing fat since there were a million people on earth.
The fact that we know that most people are familiar with the varying styles of storing fat is thanks mostly camwhoring.
To put it another way, believing that modern food is cause of giant fat thighed people is like believing that computer monitor radiation is why females have less pubic hair today.
