Well, I'm probably not the best to ask I've only actually played 3.5, PF, 5e and CP2020but I'll scroll through my harddrive and see what I can come up with.
I'll get the GURPS recommendation out of the way, although I'm sure someone else will. If you can sit down for a bit and select what rules you'll use it does anything, although I'm sure that if you get any more responses they'll say that.
Harnmaster is very low fantasy, but it does have rules for magic and such if you want to make things a bit higher.
Rogue, Warrior, Mage is incredibly rules light, so it should be easy as fuck to run. Stats are the title, no classes so character creation is very free.
If you want a generic system like GURPS without a billion splatbooks, D6 legend looks like it would be fairly easy to pick up and run - 66 page rulebook and rules for everything from swords and magic to helicopters.
Something a bit rules heavier and high fantasy there's Ars Magica, with some pretty funky word-based magic.
All I can really say is stick away from dnd 3.x and pathfinder, they're an absolute pain in the ass. Spent hours creating a unique enemy for a one off session.
Hopefully someone more knowledgeable about more systems will come along, but for now I'll just recommend Warrior, Rogue, Mage. It looks a blast to run.

GURPS starts out rules heavy as a fucking brick until a GM comes along and picks out what they need in particular. Which means its either a pain in the ass to play or takes plenty of work (and decent knowledge of the system) on the part of the GM.

If you were going to replace DnD 5E though you would use GURPS Dungeon Fantasy which is stripped down and only allows things suitable for that genre, it also has templates that mirror the most iconic DnD classes.

So its easier than doing straight GURPS.

Burning Wheel and RuneQuest come to mind, assuming you don't mind taking some time to learn a fairly large system.

The problem with Fate is that it requires active players. If the players just sit there and do nothing but stab encounters the GM throws at them, then the game will wind down and become boring very quickly. You want a group which will actively do stuff, or at least actively engage with the system during play.

ACKS.

Pure D&D from the old sword and sorcery roots, full of save or die, traps, monsters. Rules to command armies. Rules to command cities, nations, bastions, to buy mercenaries and henchmen, to creates magical objects, potions, to call upon gods. Can be explained to children in two minutes. Ridiculously complete.

Best D&D retroclone I have ever seen, read, or played.

Runequest is crunchy but it holds up together. You can get the basics down in a few hours, and the magic is very modular and allows as much or as little as you like. Combat is fast and lethal.

GURPS with the fantasy book is even heavier but if you wanted to limit crunch you could use GURPS lite and cherry pick some magic

Shadow of the demon lord combines a fair bit of the good aspects of 5e with a looser "class" mechanic and lighter rules. It kind of wears grimderp on its sleeve but it isn't endemic.

ACKS combines older school mechanics with some newer ones (notably, feats).

Hackmaster is only good if you think the worst parts of 2e (1000000 tables) are hilarious. The initiative system is interesting but very tedious and slow.

Very much seconding WRM, it's a well designed and flexible system that's easy to pick up, easy to run and easy to expand or modify. It's almost all I run nowadays, and it's my go to for fantasy campaigns.

That PDF is the earlier rules-lite version, the current version is 30-some pages, both are completely and legally free. Take your pick.
