Star Wars fighters took inspiration from the dogfighters of WWII. Their dogfights involve laser cannons primarily, much like the dogfighters of WWII used machine guns rather than missiles.

Jet dogfighting was a much different kind of combat, and the Phantom in its first version didn't even include a machine gun because the military was pushing its anti-aircraft missiles so hard, despite that fact that they barely worked.

specifically lucas took inspiration from the dam busters & 633 squadron, two wwII air combat films.

and the gunpod was more an issue of cost-effectiveness than actual utility
usaf records put the total gun kills for the entire war at just 15, half of the sidewinder alone (which more than anything just shows how relatively minor the air to air theater was)
