The way I see it Saitama's player is a guy who has achieved a frankly worrying level of system mastery and made One Punch Man purely to see if he could.
What he'd intended as a thought experiment actually caught on with his friends because the table thought it was hilarious and what the DM had meant as a high action superhero campaign became an action comedy. Genos, the new player in the group, is actually learning a lot about roleplaying since his super serious kinda edgy cyborg character has to bounce off Saitama and becomes a more rounded person as a result.
Since the GM had to throw the final boss at the group a while ago just to have a fight that lasted more than one round, he's been focusing on social aspects a little more to try and home in on Saitama's poor social optimization, which Saitama's player is fine with.
On the subject of over-optimized anime protagonists, I'm pretty sure Bleach is a campaign run by a well-meaning but somewhat insane GM who can't balance homebrew content to save his life. Most of the players can't survive a single combat but one guy, through absurd abuse of the poorly thought out racial template system, is keeping up.

How on Earth is Pandora's Actor a That Guy? He's one of the most helpful characters in the story, yet unlike the Guardians he never causes problems by misinterpreting Ainz's goals and forcing him into awful situations. He also spends most of his time in the background, doing the important but boring jobs that the other characters don't want to do (like keeping stock of magic items).
His personality is kind of strange, but only because Ainz told him to act that way during chargen.

Actually, I think Captain McGraw/Captain America is much more interesting than the typical "That Guy" characters. He's suspicious, bloodthirsty when he thinks it's safe, cowardly at all other times, and generally a total fuckup. But he's also somewhat aware that he's a total fuckup, and is desperate to not let it end his career. He's got actual character hooks and useful flaws.

Expanding on this point I made, every That Guy action that Geralt can take is one that was made at the choice of the player. If you play as a completely normal guy (as much as you can), then you're not going to make Geralt into an That Guy character.

Something I hate about Bleach is that broader, more useful powers tend to ALSO be way more powerful, instead of fitting into a 'weak but flexible' and 'strong but limited' dynamics. So Ishida's 'choose two targets and reverse recent changes to them' power is actually rather narrow and explicitly weaker than Jugram's 'negate any misfortune I'd suffer, or any fortune my enemies would gain, and turn it into misfortune for them instead, with misfortune including literally anything I don't like'.
The funny thing is that Jugram's power isn't even 'Balance', it's literally the opposite because it gives him all the 'fortune' and the enemy all the 'misfortune', instead of an equal amount of each. Sure, he could use it to penalize himself, but why would he ever do that? Compare it with Shunsui Kyoraku's Shikai that forces its benefits (and weaknesses) on both himself and his opponent.
Anyway, huge digression but I think it's a major reason why I stopped enjoying Bleach as much as I used to. I don't mind powers being awesome, but when they have no apparent drawbacks and are versatile as hell, it's too much.
