I don't get dex to damage here until level 8, that's terrible. Maybe I could just do a 2 level dip into Savage Tech, but I'm still going to want to pick up Snap shot/Improved Snap Shot later for the threatening, plus without the bonus feats I'm extra starved.

I'd modify your build as follows:
1 Gunslinger 1 - PBS, Precise Shot
2 Warpriest 1
3 Fighter 1 - Weapon Finesse, Greater Weapon Finesse
4 Warpriest 2
5 Warpriest 3 - Rapid Shot, Deadly Aim
6 Warpriest 4
7 Warpriest 5 - Rapid Reload
8 Warpriest 6 - Clustered Shots

Dex to Damage is more important than anything else. This build grabs it ASAP, and maximizes your Warpriest levels. You get Clustered Shots 1 level later, but overall this build is wayyyy stronger

The two free ammunition DSP options are the Hashasheen Gunslinger (Akashic Mysteries) and the Gunsmoke Mystic (Path of War: Expanded). The Gunsmoke Mystic is probably the strongest firearms class in the game by a fair margin; the Hashasheen Gunslinger is just a better gunslinger, but if you're using veilweaving in the first place you might as well be a Hand Cannon vizier or something.

The Spheres Armorist (which isn't actually good) and Warsoul's Discipline Weapon Shapes are also immune to ammunition.

Hand Cannons are actually pretty subpar; they can do okay, absolutely, but if you put that much "build" into a veilweaver (it won't even be +5 until Vizier 18 or so, and that's with a +3 item!) you'd get way more power out of just using those same veils and essence to buff a regular weapon.

Siege Survivor: Dwarves who make their homes in the Sky Citadels are trained to outlast sieges and serve as vigilant guards. They gain Endurance as a bonus feat. There are other ways to get the prof, and not a whole lot gunslinger gives you, even the 90% cost reduction on ammo doesn't really seem worth it when you can feat into it.

Big good prince is obviously opposed by the lich.

The tinker dwarf is opposed by a friendly artificer golemmancer who I hope will earn her sympathy and pity, so it'll suck when he has to die.
Paladin of the God of secrets is opposed by cowardly blackguard who will be an early reoccurring villain (I want a guy who just doesn't die, to fuel his anger)
I have no clue what villain to give the severist (a 3rd party class, anime hero who cuts magic apart) or the dual shield fighter.

Okay so.

There is the Destructive Focus weapon quality in the Destruction Handbook. At the start of your turn, you can choose if its enhancement bonus applies to the weapon, or your destructive blasts, like how Guardian and Defending work.

This is true, although most make things elemental as opposed to needing a spell point. I think the only Type that needs a spell point in the base book is Force, and then there's like, Disintegrate and Radiation Blast in the handbook...

There is Stone Blast, which entirely skips past SR, and Crafted Blast to bump up your damage when you don't need or want an element/rider and don't need to tangle with SR. There also exists the Intensifying Gloves, which reduce a given energy resistance by 5, or 10 for the greater version.

The Focused Blast Type Group feat gives you +5 CL (Not to exceed HD) with one blast type group, effectively making you a fullcaster for that type. And while it and staves won't bump the damage, they still bump save DCs

As-is, I'm not 100% happy with Elemental Focus. Trying to think of something nice to give it instead of just the extra talent, since that's a little boring.

Alright, so I'm thinking of having the players face off against a hag coven in three separate encounters (there will be healing items looted along the way).

The first would be four shrine-blessed skellies benefiting from desecration, two burning skellies, and a flue hag.

The second would be an ash hag, a medium fire elemental, a human cultist (NPC), and two savage mercenary (NPCs).

The final encounter would be an annis hag, an ogrekin, and a dhampir.

Is this reasonable for a party of 6-7 level 3 characters?

What kind of loot would you expect to get for clearing this? I'm thinking some neat slotless magical items, a couple of wands, and a +1 weapon of some kind (maybe with a special quality on top of the enhancement bonus) at the end.

The ogrekin is a fighter 2 and dhampir is fighter 1. They're just the premade NPC statblocks you can find on the PFSRD site.

Party comp is a fighter, sorcerer, paladin, cavalier (who will not have access to his horse here), inquisitor (who is built nearly useless for combat), cleric, and rogue.

Saves you on ammo costs, and opening up dual-wielding increases your overall damage much more than a -2 or so you take if they save.

Since elf is on the table, the Spell Dancer magus archetype is another option. Medium and heavy armor usage is replaced by a substantial insight bonus to AC (+4 at level 13). You also get extra dodge bonuses to AC against movement AoOs while your spell dance is up.

I'd consider it an evil act, but not one so evil it can't be counterbalanced by good intentions or context, so it could also be neutral if done correctly. You could also purchase slaves to protect them from some kind of harm/abuse which could be a good act if freeing them isn't an option (such as freeing slaves not being legal) so that could muddy things.

But it is generally a very powerfully lawful act, enforcing order and restricting freedom in a very strong manner. I would suggest any chaotic character would risk changing to neutral for purchasing and keeping a slave for an extended period of time, though i might be more lenient to characters who take slaves themselves and kill them shortly afterwards, allowing them to remain chaotic because that's more of a ruse or extended torture than true slavery.

I would replace poison immunity with Bravery(As Fighter) leading into fear immunity.

Maybe add a Catchphrase feature, similar in function to Litany spells(As Inquisitor/Paladin), swift action Spell-like-abilities that give situational benefits.

Another dumb followup question-
I think rather than +2 of something like a chain shirt, it's far better to get a +1 mithril breastplate, if you've got medium armor proficency. That's 200 base, 4000 for mithril, which comes with masterwork, and 1000 for +1, but counts as light armor, weighs nearly nothing, and has a +7 armor bonus, compared to the +6 of a chain shirt, and has the same armor check penalty as said +2 chain shirt, yeah?

Yes, the light-armour user wearing a mithral breastplate is a time-honoured tradition. Note that mithral doesn't make it count as light for proficiency, though. But by taking the armour expert trait, or any of the myriad other ways to reduce the ACP by 1, its ACP becomes nothing, and thus you have no nonproficiency penalty.
