The Light Elves have a quintet of Luna deities for the new, waning, waxing and full. Their genders are not given.
Dark Elves have two, a maiden holding a lit lamp as she walks through the night and a young man who extinguished his as he stalks game.

It's in Dark Souls because in a lot of world cultures the deities associated with the moon have been people with characteristics of both genders, and this is deliberate. Shamans were often expected to have such characteristics, and the whole 'two-spirit' native Americans thing is to do with that, as well as 'hijra' (spelling?) from India. Spirit of a man and a woman in the same body, therefore mystical somehow because it's different - due to what little was known about biological sex variance in those days, even though it's not much different now in societal perception - and they'd be expected to have a more balanced understanding of the people they were trying to help; the men and women of the tribe. Gwyndolin was born with a strong affinity for divine moon magic. It provided him with unique powers that were unprecedented in Gwyn's family line until now, but the moon power itself acted as a sort of constant hormone therapy to Gwyndolin turning him into a femboy.

There are many Luna gods in the setting I'm in but my Paladin worships a specific group of Celestial Gods.
One of these is a Moon Goddess who governs the realm of dreams and nightmares. She is a patron to music, so much so that her daughter is a Goddess of Music.
She is also the master and in many cases the mother of all nocturnal beings.
This includes Vampires and the 'Were' which has earned her a fair amount of hatred.
She is not a violent or evil Goddess but her ephemeral nature and alien morality ensures few make the distinction.
She is, however a very active goddess. slipping into dreams of hundreds of thousands every night, conversing with the dreamers on all sorts of topics from love to legal disputes.
Largely because of this, she is by far the most widely known of the Luna gods.Any relation to a certain Luna goddess from a certain cartoon for young girls may, or may not, be a coincidence.
The moon deity is sexless, because it is literally a giant, spherical, sentient rock.

If you ask elves, odds are that they consider the moon goddess to be female, locked in her eternal dance with the sun. The sky is their joined bodies- the night is the moon's, the day is the sun's, and dusk and dawn are where they meet. Anthropomorphized, the moon would resemble a drow with starry skin and glowing hair, while the sun would resemble a blue-skinned elf with a blazing mane.
If you ask northern (more tribal) elves, the moon was the most coveted treasure of the great white wolf spirit, but was stolen by the blue raven, who hid it in the sky.
If you ask a dwarf, it has no gender because it's just the biggest gem in the world that the head of the dwarf pantheon put up in the sky to keep out of the reach of his greediest son.
Ask a gnome, and they'd ask why everything has to be a god.

I think it's in part because you have to kill CD in order to progress the game while killing Gwyndolin explicitly requires you to go out of your way to be a prick. Also his boss fight is incredibly shitty and you usually kill him with a dumb gimmick, so he's forgettable as a boss, too.
Also he's ugly. Remember how bad you felt for fighting Sif even though he was being an unreasonable cunt. That's because Sif is beautiful giant wolf, has a sad, heroic theme and begins to limp when you hurt him enough. CD just waddles around like an exceptional individual then falls into the toilet after you swat his fingers. He's a tragic character, sure, but so much impact is lost in the way he's handled that he barely feels that way. Gwyndolin? He's a god, his design is fairly fresh, his fight is memorable, he has a reason for doing what he does beyond simply being a moron, he has a great taste in women, and he tickles your pickle if you're into that sort of thing.
