Any ideas? Party is going to have to survive being hunted by these symbiotes after being hired to capture some and release others and generally getting fucked over by the mega-corps

even with megacorps in control, you're going to be hard pressed to hide the fact from the other corps that want to pry... which might be exactly who hired them. megacorps only play nice together if there's profit.
As for the last stage, maybe few of them survive that long, but they gain instinctual flesh warping, but lose conscious control? Like their features and limbs flow and flop like water when they sleep but they're mostly normal when awake

A PS2 / PC game made by Bungie just before Microsoft bought them. It's a beat em up with some interesting gun play elements and a few weapons there are a bit out there.
You can knock down enemies to take their weapons. There is also a disarm move, but they can also do the same to you.
Has the usual Bungie fare like overshields and active camo, but you can carry hypo's to recover health or use them at max health for a strength boost.
Setting:
Set in the future, cities are surrounded by atmospheric processors and life outside them is toxic. The MC's mother died of an infection within minutes of getting a scratch from a plant out there.
This led her father and uncle to develop a biotech solution that would allow humans to survive outside the cities.
The "Daodan Chrysalis" is an implanted organ "which would replace damaged tissue and organs as the host body experienced harm, eventually resulting in the host becoming exceptionally strong and resilient."
As you get stronger over the course of the game this is reflected by access to more special moves and combos rather than an actual increase in health.
Looks a little dated but was good at the time.At the end of the game you find out that the atmospheric processors have been sabotaged and are about to switch into reverse poisoning everyone. So you have to send a signal to blow them all up.
It's implied in the final cut scene that the Chrysalis will be used to try and save as many people as possible.

They gain the ability to split and give derivative consciousness to parts of flesh they can then send out to perform tasks. They have no communication with these parts aside from the orders or parameters given at separation.

Well, power is kinda ephemeral, plus it's obviously only for the top tier infected, plus the games themselves vary somewhat with upgrades.
For regular human PCs, just regeneration is a good start. Then show stronger guys that started growing super-tough scar tissue. An episode paranoia play with a shapeshifter hunting them down. And a guy with one realised weapon power is the boss.

So you'd have around 8,400 of these things running around. A really hard number to try and cover up.

As they continue to develop they gain a rudimentary telepathy or something. Not full hive mind (yet) but the ability to send short bursts of information to other infected in the area letting them coordinate and sweep for the players.
