Undead in my setting are more or less just simulacrums made of corpses. They can be programmed or animated to seem as though they are the undead consciousnesses of their past bodies, but the truth is that there is no universal afterlife. There is only one non-physical plane that is occupied primarily by the deities of the setting, but human (or humanoid) consciousness cannot properly exist there without an anchor like gods can. In some faiths, there is an afterlife for adherants which more or less just boils down to their respective deities copying their minds onto themselves and allowing them to share a little bit of their god-RAM in this place, but they're still technically just copies of memories and neural paths, and cannot be truly put back into bodies so much as just copied (poorly.)

There are SOME beings that partially exist within this alternate plane at the same time (the upper caste of elves for example) and as a result they are very ghostly beings that can drift through solid matter and shit, but that's about it.

The setting actually revolves around the concept that there is no such thing as a "soul."

Even this other plane that deities exist within is a psychic field projected by living beings. It's cloud-computed divinity.

Yeah. As a result, the "cleric" archetype kind of characters aren't typically any better at dealing with them just by merit of class as they remain unaffected by positive/negative damage because they're functionally constructs. There are some devotees of a particular faith who's "clerics" specialize partially in destroying undead, but that more has to do with the fact that a big part of their faith is martyrdom and sacrifices, and animated corpses and the like giving people the notion that death is not absolute dilutes the sacrifices of their saints and is therefore heresy.

It just so happens that creating a golem out of a skeleton or corpse is just a very cost effective and efficient process compared to making a body yourself.

My undead are the result of tampering with the Divine Pacts of life and death. By being separate form that cycle, they are unable to die but anathema to all life. 99% of undead are created unwittingly or unwillingly, either through a wrinkle in the magics of the world (a glitch, if you will) or by a lazy pact with an upstart death cult. Becoming undead isnt all that hard for those who are well versed in magic, but it does have its disadvantages.

By breaking an element of The Pact, you are counted as a blasphemy in the eyes of the Ruling Gods, and so sunlight burns what remains of your flesh, life withers and dies in your presence, and most animals will attack you on sight. The only place you can find any respite is in the low places among the insects and the damned. Undead are also welcomed in small numbers into the Faefold Holds; wrinkles in the world where the sun does not reach and the old Fae still rule.

Resurrection long after death is a tenuous proposition, though there are some forms of mummification which allow for it by effectively trapping the soul within the body or a nearby vessel.

Necromancers do not create undead, they create husks and other monstrosities which have different properties altogether. Husks are simply profusions of the a necromancer's will into otherwise empty bodies, filling them with a weak but persistent will. As they break no Pacts, husks are not blasphemies like true Undead.

The final and most terrible form of non-living entity are demiurges; the cast off flesh of dead gods. They are not technically bound to any Pact, and so can never truly die. They are held in a death like state by the lingering will of whatever force killed them. The will of the original being still exists, and occasionally its tides wax in such a way that it can animate a part of itself. These demiurges are well aware of what they are, and the fleeting nature of their existence, and so they tend to be..disruptive.

You'll have to be more specific than that. Im not just going to spend the next day and a half dumping EVERYTHING about EVERYTHING. There's much more to the setting than any one party of PCs could really ever get through.
