"He or she" was used specifically in an attempt to broadcast 'hey this is a game not just for dudes', ironically. It's just that political correctness has advanced to a point that being specifically inclusive toward both male and females is apparently by default not being inclusive to everyone else.
I just think it's a silly non-issue that very, very few people will actually be offended by or turned off of the game because of, and people in the headspace to take the use of "he or she" as a pointed insult would probably find something else they consider personally antagonistic. It's a completely innocuous descriptor and part of the game's vernacular, and would require a ridiculous amount of errata to change to appease those handful of people.
