What if a young, inexperienced paladin starts out honestly desiring to smite a succubus that's way out of his league? What if she knows that she could very well wreck his shit but decides to toy with him first because he may very well prove himself useful? What if, through sustained and chronic conflict in which the paladin strives hard to smite the succubus while she just tries not to hurt his pride too much the two of them actually end up falling in love? What if, in spite of this, neither side is willing to compromise on their morals and tries to convert the other?

Gotta agree, I talked about this on a Thread about how we could make Succubi Exciting again.
Why can't I have a little Imp who learned to become a better person, holding my stuff and doing small chores for me rather than trying to backstab me, trick me, or convince me to backstab or trick someone else for once.
I'd also like to see more like "Behemoth" Demons try to better themselves. Not Gentle Giants, not Merciless, Chaotic but Dedicated to a Good Cause type of person, a reasonable Demon. doesn't have to be the nicest or smartest just a Demon that would rather leave a little bandit clan or goblin tribe alive rather than slaughtering the whole lot.

Succubi are intelligent spies and infiltrators that need to understand mortal emotions to a degree where they can be mimicked and manipulated. They are always dancing along the line between acting as a character and being a character, and while their demonic nature keeps redemption as an extreme rarity, their unique role and proximity makes them more likely to be influenced by the mentality of mortals than other demons.

It's a tale older than time, of a person pretending to fall in love, but accidentally doing so. Or a spy sympathizing with the country they are spying on. Or simply a foreigner picking up the habits and customs of their new city.

Being demons makes it so that this isn't really a daily concern, but if any demons were to be redeemed, succubi would have the highest chance because of this.

Not necessarily "redeemed", but this is how I do up my Fey.

The "Fey" is composed of Demons and Angels who've basically lived long enough within the mortal realm to have developed some sense of context and have looked upon their own native divine/demonic realms and have found them "lacking".

Nature is an overwhelming, sympathetic and addictive force that can overcome all temperaments and alignments through time.

Bad female? Reform her, teach her some manners, she'll calm down when she's a mother, she's hot lol.

I'd prefer a redeemed Erinye, myself.

As for why, probably half the attractive sexy fantasy (who wouldn't want someone literally build for sex but not dangerous?) and half that it's somewhat more "believable" when it looks somewhat human. A succubus could pass herself off as a human, or at least appear human-ish most of the time. A balrog or bone devil is just going to scream BAD GUY unless you play them up as some Mary Sue wonder-savior.

Also, it's probably because a succubus is (relatively) non-dangerous. Most of their dangers involve charisma and discussion, while most of the danger of a balrog involves fire and destruction. It's easier to think of a non-deceptive succubus than a non-destructive balrog.

Also, at this point it's because a recurring theme for redeemed succubus or redeemed/good undead, while redeemed other evil demons are far less common.

I don't think that's quite true.

They certainly don't act unabashedly amoral at every moment, although this is more due to desiring or requiring subtlety than any sort of moral restraint. It's the equivalent of a demonic assassin not casually butchering any human they come across, and instead focusing on locating and killing their assassination target. Or, for that matter, a demon bound to a sorcerer not immediately slaughtering the first assistant they see: most (intelligent) demons would try to play the game for their independence over just doing something Because It Is Evilâ„¢.

As a matter of fact, Hellboy is a kind of poster boy for such characters, although not really because he was raised to be good from the beginning rather than choosing to shed his old life on his own. I suppose it is much more plausible though - any sparks of goodness among demons would have to be a weakness and used against the entity exhibiting them.
