I always liked toying with this idea. I wanted to do something with a friendly lich who chose undeath so he could continue farming. Using skeletons as fieldwork, raising cattle and corn, and having fun with his grandkids who still come and see old Farmer McLich. I'm sure given enough time you could make a semi decent body instead of doing the preserved corpse thing.
Shoot, there's a goddess in Libris Mortis, Evening Glory, whom is an Undead goddess of love, eho believes that love can become truly eternal with undeath.
She appears as an extremely pale, yet perfect woman, with hollow heart shaped holes in her palms.
Her Herald is usually a female lich, and her allies are Fire Elementals.

What is the fucking point of these questions when they are not setting and/or system specific? There are billions of fucking different ways magic is treated and imagined and explained through out the fantasy genre and traditional games media. Asking questions like this is fucking pointless and waste of everyones time. I genuinely believe they actually find the idea that they are "right" or "wrong" on a completely generic question appealing. So they constantly try to reduce the whole fucking genre and platform to some kind of "universal" system, and find debating this kind of shit gratifying.

Read this book. It's about a scientist who creates an exosuit that can preserve the consciousness of the dead, thanks to a special polymer he developed. He spends most of the story dead, and even gets a glimpse of hell where he sees the lustful being punished by being stripped of their flesh, and then forced to "mate" with one another as skeletons until the constant abrasion grinds them all into dust.
Kinda edgy, but a good read nonetheless. Might spawn some cool campaign ideas.

Explain why not for each. Ghouls at least shouldn't be out of the question since it's said that they can be negotiated with and aren't always hostile if they're well fed at the moment, there's even a feat that ghouls with high charisma can take that makes them pass as living.

Because they don't have memories of being human, or in the case of wights actively turned their back on it. Wraiths are " Malace incarnate" as the new rules state. These undead just don't have the will, or desire to fight against the negative energy hedge to kill anything that lives. Care for the wellbeing of the other is nessisary for love.
