Any info on how to run these kinds of games? I've always wanted to learn, but i've run across surprisingly little info on how to actually play.

Try asking on civ general thread. From what I've, the first three votes for the race and environment are the ones you run. As QM, you build the story, give us choices, call for a roll (1d100,2d20 and so on) to decide if the action is successful or not and it will snowball from there.

On saturdays there is a Civ General, where the Civ runners gather to talk about running Civs. Sometimes the threads bump up during the week as well.
Lurking more is always advisable, but the games come down to the CM controlling the gameworld while players guide the development of a civilization using collective decision making, with the CM converting their inputs into outcomes based on whatever system they are doing. Games usually follow a course of discovery and development interlaced with problems and conflict common to the history of civilizations.
Games typically start with votes as to race and starting location, though choosing both yourself is a valid option.
In short, your players are playing a game in the Civilization series while you are the computer, free to input what civilizations, encounters and conflicts you like.

I say further than that since you're new. Beginning at dawn might be too much unless you're imaginative enough how the race(s) were born and came to be and build up from there. But it's up to you really. The most important thing to do is to have fun with it.

Would like to see a hybrid race that has opened pathways towards magical and industrial but also bio, kind of like accelerated evolution or something.
Doesn't need to excel in anything in particular, just have the option to do a mixture of everything.
