Where would be a good place to start for someone interested in the lore behind Warhammer 40k?

Start with https://www.youtube.com/watch?v=-MeVxKZBOfM and then head over to https://1d4chan.org/wiki/Template:40k-Timeline and hit the expand function. Hit up the war in Heaven, Fall of the Eldar, everything pre-heresy, and combine that with what you learned from the video.
Search up the main armies (Imperial Guard, Space Marines, Chaos Marines, Orks, Eldar, Chaos Daemons, Necrons, Sisters of Battle, Dark Eldar, Tau if you want them ordered from important to not important) and give yourself enough background to pretty much figure most anything out.
Do not do this all at once, and be aware than 1d4chan, which more entertaining, is fairly biased and a bit wonky.
http://wh40k.lexicanum.com is fairly by-the-book.
The Dawn of War series is a great way to introduce yourself to the lore, and Space Marine (the video game) offers a very broad scope of understanding as well, and is made as Babby's first 40K, being one of the major releases.
