Dual wielding shields is an actual fighting style in some worlds, and specially efficient in low to mid levels. The sheer amount of armor allows for a great stalling fighter, as you exhaust most enemies' skills and resources while constantly bashing them into submission.

Messers were sword workarounds not for carrying purposes but for construction. The knifemaking guilds wanted to be able to sell swords so they made big knives with no pommels. Boom, not a sword.

Gehrmans scythe is a more practical weapon than most give it credit for. Unlike a real scythe, both sides of the Burial Blade are sharpened -- the side that faces away from you is sharpened, and it's what you're using in its untransformed mode, and the inside edge obviously is as well. It's really more of an oddly-shaped war pick than anything else.
Still not the most practical weapon, but not entirely useless either.
The Logarius Wheel, on the other hand, is a completely different story
