The primary reason that women were largely excluded from hunting roles and later combat isn't necessarily because they were physically weaker (though they do suffer from less upper body strength than a comparable male) but because the uterus was simply too valuable to be risked in combat, so they were excluded from violent roles in most ancient societies to instead focus on keeping society alive by producing and raising children. You can't grow your society if you aren't having babies, and having babies is hard.
The average, healthy woman is capable of producing one child every year, if that often (it's probably closer to one ever 1.5-2 years if we want the mom to actually recoup from the trauma of pregnancy). Women get pregnant as well - while pregnant women aren't helpless, the last trimester is extremely hard on the woman, and any undue stress could cause a miscarriage - they really require a low-impact, low-stress lifestyle during that period to ensure the health of the child they're carrying. After they give birth (where their vagina basically rips itself apart and her hips often realign themselvesbecause fuck you Adam and Eve you had to know the difference between Good and Evil didn't you), and that takes a long while for the mom to recover. Through this entire process, while again, a woman isn't a helpless china doll, she's also at a physical disadvantage because her body is being played like a bagpipe by hormones and stress.
After the child is born, the baby has to me provided with the mothers milk for at least a few months, if not more, so that means that the mom needs to be on-hand to provide for the baby, and she needs to be healthy to produce the proper nutrients in her milk.
All of this is a long, drawn-out, intensive process that was absolutely essential to keeping a society alive. Men never had to deal with this, so they fought

Women are more than capable of serving in noncombat roles in positions that aren't on the frontline, where the strength disparity isn't a factor. If we have a volunteer military (like the US) then you take who volunteers and assign them based on their ability to perform in the machine. There were absolutely groups of soldiers who were die-hard trainers and incredibly strong, who were professional soldiers in every way. However, they were not the average soldier, but rather a fringe warrior elite, and the almost always were trained from birth to be exactly that, an opportunity that was (reasonably) denied to any and all women at the time. It's pretty unfair to point to a Knight and say that he's clearly superior because he's a male, when females of the time never had the lifetime of coaching and physical training to get to the point he is at. In D&D 5e, Strength caps out at 20 for players - that's the absolute maximum a human can achieve without supernatural help (like a Belt of Giant Strength or the Barbarian capstone ability).
Now imagine that women's Strength cap is 16. That's essentially how things are in the real world - women can eat protein and train their bodies and they can get fairly strong, but because of their biology, they cannot get as strong as a man can without using testosterone or steroids (and a man who uses either will still handily win).

More seriously, if you want to make a more dominant ladyknight, it's good to be able to show that she's domineering. Her grabbing the guy three weeks later feels a little out of the blue; maybe cut down on the time gap and have her be a little teasing or touchy-feely beforehand. If you were to make some sort of tomboyish girl, I'd recommend making showing off how energetic she is or how she acts like one of the guys. In the second post, saying 'aside from some muscle' sounds negative, where I assume most guys into ladyknights would want the muscle and curves.
The focus on the city and the cart, as light as they are, starts to detract from the character - which is obviously the focus of the story, and when the story as a whole is so short you don't get much time to focus on the characters. It could easily be cut down or simplified. Some readers might prefer her actually whisking him away - instead of settling him with a job, she offers to take him along with her on her travels, and of course her being so strong and beautiful, he agrees. And the male lead doesn't have to be necessarily taking charge, but he doesn't seem to care too much about what's happening or show obvious interest. Have some interaction between the merchant's son and the lady knight - that way we can get a boner when she finds him adorably weak or something.

As someone who works in what's typically considered a boy's club profession, I can confirm that having a woman around, even one that's scrawny and weak and couldn't possibly do the job I do makes things 10,000% easier.
It's a known fact that female voices give +4 CHA when interacting with nonparty characters and take the "Women Talk" feat for free. Based on my real-world experience, I would require that every adventuring party include at least one woman. If she can pull her weight in combat, that's gravy.

So one of the settings in my gurps Infinite Worlds game is a fantasy realm where rather than a Roman Empire it was the Minoan civilization that expanded and fell; what little we know about that civilization so far points to women as having a high place in society. In this fantasy world circa 1650, it's a purely cultural thing, but women are generally seen as superior to men-not for physical reasons, but for spiritual and emotional ones.
Women are considered more resistant to temptation, more even-keeled and thus better administrators and rulers than men. The local christianityislam knockoff did a lot to reduce sexism and advance the position of men in society, now they can hold offices(though not really be monarchs) and have positions of import outside the military.
The temptation and spiritual stuff is really important because there's a lot of spirituality involved in the use of the local Guyver knockoffs; so Guyver users are overwhelmingly female, and are a key component of military actions.
That said recent advances in firearms technology are eroding the importance of those bio-armors; they're heading to a more equal world, albeit slowly.

I created a campaign over a five year period, and one of the kingdoms (Lawfully good aligned kingdom) was ruled by a single Queen who lead her troops in battle. Her knights and cavaliers were of either gender and either race, and served her loyally. She did however have a cadre of five hundred elites, that wer female-only, warrior women trained of the sword and shield since birth and who wore the best mithril armor money could buy. Since women have, in these settings, been historically capable of forcing the issue, gender roles are even more guidelines than actual rules than in the real world. Beyond that, Paladins are chosen by the gods and sometimes they find proper champion material in something with two X chromosomes. Once you've got divine potency, which bell curve of physical ability you started with matters a whole lot less. Female knights would still be the exception as they'd never be pushed into training and might even be discouraged from treating combat training as anything more than a hobby, but if she really WANTS to enter a combat role the law doesn't stop her (Her parents or husband, if avaliable, might be another story)

This. Being capped at 16 strength assuming it's not a roll-in-order scenario in AD&D doesn't absolutely make a fighter woman non-viable. Most of a fighter's strength comes in armour and weapon proficiency and the ability to make multiple attacks and have weapon specialization.
The idea that you NEED 18/00 to be a viable fighter is modern D&D bullshit brought by 3e's ivory tower cancer about everything having to be optimized at all costs. Assuming random die rolls and AD&D's tables, if you roll an 18 but your STR is capped to 16, you can still put it on DEX or CON and still be a fantastic fighter.
Besides, the vast majority of characters won't have 18/00 STR just because that's how statistics work, it was called Exceptional strength for a reason. And if you do find Gauntlets of Ogre Power, they still set your STR to 18/00 regardless of gender. Same goes for Belts of Giant Strength, but we all agree that once magic kicks in real-world physics just go fuck themselves.
And if the system is built well enough, capping a female PC's strength may still make her a viable fighter if she can get more mileage out of her other stats or in being more versatile rather than highly specialized. This way a "High STR" build would deal the highest damage and lift the heaviest weight, while a less specialized "feminine" build would bring other things to the table, like different combat manoeuvres, a broader skill selection, a wider breadth of weapon proficiency, some magic or whatever.
