I'm playing a Psionic in a super freeform game where Psionics are rare and hunted down with extreme prejudice. There are no mechanical constraints to speak of. The GM has so far allowed me to move objects telepathically, read minds, brainwash people, crush objects that are contained inside other solid objects, and once gave me an extremely difficult roll to essentially level a building from the inside.
What else can I do with my Psionics, /tg/? Does anyone have any clever or subtle ways I could pull off something insane without the GM immediately reevaluating his approach to Psionics?

Clever! Crows wouldn't be all that useful as protectors in this setting, but using them as a spy network would be pretty neat.

Forking. In the Eclipse Phase sense.
Make friends with a biotech specialist, do a couple favors for him, then get him to clone you, thrice.
Clone 1: Upload your mind to it, then put it on ice somewhere secret and secure. This is your backup copy, in case you fuck up horribly.
Clone 2: Mind-meld with it, make it you. Split the week down the middle in a way that both of you are satisfied with, and schedule a weekly brain-share session, so you both stay you. To avoid plotting against yourself, make sure to forget which one is the clone.
Clone 3: Fuck it up, make it a murderhobo, and lock it in a box. This thing will be useful for whenever someone decides it's time for you to go.

1) No supernatural abilities. Psionics are a one-off in this setting, and you literally roll a dice at character creation and have an extremely small chance of being able to play a Psionic character.
2) I've met a pretty relaxed gambler type who used his powers to cheat, an emotional wreck of a woman who was extremely powerful but didn't have much control, and a science experiment who brutally murdered everyone in the facility he was kept in, and has been lurking in the abandoned remains ever since. He could possess people by making eye contact with them.
3) If you make sure that you leave no witnesses to any use of your Psionics, none.

you might try building a "para-net" such as is done in the Dresden Files. it is, in essence, a worldwide/countrywide support group for psions. if danger is coming or a group of normies are on the warpath a psion in one place can warn others. whose territorial, and whose not, that sort of thing.
might be an interesting social goal.
I ask about the tower is a not too terribly literal sense...VERY GENTLY acquire a small apartment building. gain the occasional work of a few experts and turn either it's basement or it's top floor into a safe haven keyed so only a psion can get in, and only if they already know it's there...get people to run the rest of the buildings as reasonable rent, repeat as needed and have a network of safehouses that makes you revenue.
