The text originally proposed in R&D was a pithy but throw-away "If there's anything a werewolf hates, it's a collar".
It was later changed a bit to give some exposition, "If there's anything a werewolf hates, it's a collar -- especially Avacyn's Collar, the symbol of her church". This is what was printed. It's so clunkly that most people made fun of it, as in the OP image. In fairness, I had to look at a lot of Innistrad to put 2 and 2 together that the mostly-meaningless symbol was called a "collar". Someone less invested would just read the text as originally proposed and say, "huh, that makes no sense." They needed something to link the image and the name to make other references work, so this card got the shitty flavor text necessary to make that happen.

Doubt it. The other Gatewatch 'walkers were the Origin walkers. Those are the five that the main story focus will be on for the foreseeable future. When asked about Garruck, Doug and Mark said that he's basically been downgraded to "antagonist," suggesting Liliana will have more staying power as a protagonist.
Liliana is as likely as any black walker to join the gatewatch. That being said, it's still highly unlikely.

Right now the threats are Emrakul, Bolas, demon #3, and the chain veil. We'll have to see which of those actually make her run to the safety of a team AND make the team accept her.

All walkers got downgraded in power when the mending happened. Walkers that were around pre-mending, 'oldwalkers,' still have roughly the same power as those who only came after the mending. That walkers that survived the mending and are still around are older and more experienced. Sorin would only be as much stronger than them as a regular vamp to a regular human/elf.
