What could be some headgear for elves that would protect the ears from the cold?

Assuming that we talk about the longer animu-ears. Those are really exposed and they must have a lot of blood flowing through them.

I can't think of anything that would be comfortable to wear or would not look silly.

Looking silly is relative. If they've worn something for generations upon generations, it won't look silly to them. Ear socks is the obvious answer here.

Logically speaking, the large ears would be for warmer temperatures. Snow elves would have probably close to human size ears with the tips coming to a point.

However, because fantasy, valkyrie helms have those wings on the side. Pic related. Just imagine it actually covers the ears. The wings house the ears.

Secretly, the nords weren't seeing battle angels, they were seeing elves who were charging in to help their neighbours defend their homes.

Its nice cause it folds them up against the the head helping to keep them warm doubly well. It also makes the hat stand on its own as well. Could probably make it in different colors and styles too.

And seriously - Budyonovka was mainly ment of the cavalry that would not really suffer in stealth department because of a hat, and the flaps are meant to protect neck and cheeks against cold wind as you ride, sine military uniform doesn't include any scarfs.

Since ears are relatively soft, even if they have those long stick out to the sides of their head ears they should be able to fir them under a hat or a pair of large earmuffs. Probably not very comfortable (I have normal human ears and my ears start hurting if I have earmuffs or earphones pressed against them for too long), but better than having your ears freeze.

That's how it works in my setting.
Wood elves = you average elves with longer than human ears
Desert elves = really long anime-style ears. Also shorter than wood elves (wood elves are taller than humans desert elves are slightly shorter) and brown.
Snow elves = same sized ers as humans have but with pointy tips. Also have more bodyfat than other elves to helpt them stay warm (although being elves, more bodyfat means at most slightly chubby-looking by human standards).

Depends on how flexible or nonflexible the ears are. I always imagined that elves can move their animu ears a la Deedlit, and that they just flatten their ears alongside their head and put a fuzzy hat over it all when it gets cold.

Something I really like in my elves is a strong juxtaposition of animalistic instinct (think wood elves) and regal, civilized dignity (think high elves) within the same species. So from this primal, animalistic perspective, it isn't too hard to imagine that elves would flatten their ears against their heads when it gets cold to get them closer to their body heat, and from the civilized perspective it makes sense that their human-level ingenuity and inventiveness would lead them to make warm hats of the sort that would naturally complement this built-in biological feature.
