I've been making up martial arts styles (9 swords style) for my player who is a plant monk.
I get the feeling he wants to have a crazy martial arts scene. What sort of enemy monk should I include? Weird species are good

I think a Goliath (or other large race) monk who specializes in the seven-section-staff has potential.
I'm assuming you're using 3.5 due to your 9-swords reference.
How about an evil demon-worshipping monk who dipped one level of warlock. His monk-side uses the CRF that replaces Flury Of Blows with a single strike with major damage bonus, and the CRF that swaps Stunning Fist for the Nauseated condition. The warlock side uses Hideous Blow or Eldritch Claws to add an extra d6 damage and the Frightful Blast invocation. So every attack is doing more damage and forces 2 saves.

I like the warlock notion a lot, since my player is a gestalt monk/dragonfire adept, id make the enemy monk a gestalt warlock
I'd give him Zen Archery as well.
The most important part is what you call the fighting style though

Might also look up Rattlesnake Strike from Sandstorm. Spend a Stunning Fist use to deal CON damage.
