My party once 30 lower level bandits at one point, and thanks to an AOE spell and our Dragonborn's fire breath, we incapacitated all of them. Our Ranger wanted to cut all of their throats before we could do anything else, and take all the experience points for himself. My Paladin stepped in to stop him from killing them (and getting the xp, seeing as he was already a level higher than half the party) and basically gave them all the choice to join us and atone for their sins, or never raise a hand against the innocent again or they would have to face us again.

That isn't how exp works. You can get exp just for incapacitating others, or even finding a way to resolve a situation without a fight. Exp is given whenever you successfully resolve a situation - disarming traps or throwing something into them to trigger it, talking a jumper down from a ledge, killing an enemy, convincing a shopkeeper to give you a discount, playing well at a concert, etc.

Your dm is doing exp wrong.

Yeah he realized that around when this happened. It was bullshit because at one point we were fighting orcs in a cave, and the Rogue and Dragonborn ended up have more exp than us and leveled up after the encounter. My Paladin and the Warlock were both about 10 exp away from leveling up, and when our DM noticed this, decided that a couple of orcs just got back from "patrol" so the Warlock and my Paladin could level up to be fair. The Rogue AND Dragonborn called the DM out for "picking favorites" and said they had "earned their exp and thought it was bullshit he was trying to push us up to their level."

First adventure I executed an odd two dozen surviving cultists who surrendered to us after we disrupted their 'devour the souls of innocents for power' rituals.

My comrades wanted to drag them back to civilisation, across hundreds of kilometers of tundra, along with a whole load of prisoners, when we only just arrived before a snowstorm, with limited provisions, for a trial.

Giving them ample opportunities to escape, or inconvenience us all to death, or turn on us in our sleep.

What would be the point? If its hacked up its not like people are going to not know a human did it. If its a military setting during war time then obviously the enemy did it. If its a solo killer then there are better ways of getting rid of a body. If its fantasy then who's going to be able to tell who specifically killed the victim unless its a wizard which would still be pointless to chop up the body anyhow.

Except that's been proven to not work because people are much more likely to lie to make the pain stop. You have to spend time verifying that information and expend resources keeping them alive and in custody.

People are much more likely to surrender if they know that they aren't going to get beheaded the moment it's safe.

What you do is you tell them that every time that you go out to verify information the torture is only going to get worse, and give them one chance to tell you the truth before you do anything. That ought to make them consider telling the truth.

You also forget in fictional settings there's often ways to cheeck if someone is telling the truth immediately, or at least much quicker than in the real world.

Anyone who knows you went there for fighting. If you leave no survivors, that's still going to scare people into not surrendering. It also requires that you never have allies present since they'll know you did it or you kill them, in which case no one wants to work for you.

Playing a Mahou Shoujo campaign themed heavily off Sailor Moon.
We have only killed one monster of the week so far, the rest we've been defeating them and their evil plots and then making them allies.
Like in Sailor Moon, most of the monsters have plots to harness human energy or are looking for certain life crystals. Whilst their plots would kill many people over time, we've been stopping it before it's gotten to that point.
The only monster we actually killed had gone around and killed several people already so we kinda felt she didn't deserve the chance.

It's made the rest of the Magical Girl community wary of us as we've got three demons who actually consider us friends and have actually worked out a cease-fire with the main group for the next few months while we track down the BBEG.

You can get experience from diffusing situations without violence, from solving traps/puzzles, incapactating enemies. Because how you treat prisoners isn't a one-size-fits-all sort of thing.

Some you massacre. Some you enslave. Some you recruit. Some you trade for bounties. Some you release. Some you exchange for prisoners their side holds. Some you release after symbolic mutilation. Some you release after actual mutilation. Some you sacrifice to fuel magic artifacts or rituals. And so on, and so forth.

It all depends on what would be best for you at that time, in that place, and with those particular prisoners.
