Part of the reason for that is the story of Star Wars is part of the Monomyth, and when you tap into the Monomyth it means your tale can be set in literally any period and remain impactful.
Most archetypes we know and love today have their origins in ancient Greek plays, which undoubtedly copied them from oral tradition. I've seen the entire first act of Star Wars: A New Hope written as a Norse Saga, and it fits perfectly.

Tolkien rolled in his grave when they made a film about his work focusing on the combat and war aspect when he himself had a strong dislike of war (given that he lost all but one of his closest friends in WW1 in fighting he personally saw) and when the nation of Britain swiftly industrialized and modernized which he was pretty much against entirely and when Christianity stopped being the method in which every Englishman viewed the world.
Hell, even when he was ALIVE he cared less about his novels then his fans did; he considered his work as an English professor to be more important and the LotR novels was his hobby at best.
The world we exist in now is so far from anything Tolkien would recognize that we've gone way past the point where worrying that he might take offense at something has any meaning anymore.

LoTR has more overt internal conflicts since a lot of the bad guys are generic Orcish mobs and there are very few rivals that characters contrast against, most of the conflict comes from war and division and not from having a heated rival.
i.e. A lot of Aragorn's story is about him getting his shit together and becoming a King of Men and living up to his heritage instead of being a weird forest hobo.
It's still a personal conflict, it just isn't Aragorn fighting his Evil Father, or Legolas arguing with some human princess while avoiding an Orc Bounty Hunter.Gimli is Chewbacca in this metaphor.

I'd say so too, I'd say all the conflict in LoTR is personal. I'd just say a lot of it isn't Man vs Man conflict despite all the Orc Battles.
While Sam and Gollum could be considered Man vs Ma you have to consider that the context of their conflict mostly has to do with Frodo's struggle with the ring and not so much with themselves personally.
Similarly Luke's fight with Vader has Luke overcome his internal struggle and puts Vader in a similar position to Frodo, with Luke as his Sam and Palpatine as his Gollum.

Lord of the Rings could be translated into a space opera pretty well I reckon.
I think striping the tech out from Star Wars is a more challenging proposition.
I think the big issue going either way is spaceships, which create quiet a few tonal issues.
For example the hardship Frodo goes through carrying the ring would be significantly alleviated if he was on a vessel the entire time. I suppose this could be somewhat alleviated by making the part of the story that takes place in Mordor take place on a planet but the issue still exists.

Star Wars did a pretty fantastic job of building a universe, but, if I am being totally fair, they haven't made a movie with a good story in it yet. The best one so far has been The Empire Strikes Back, but even that is just an okay film,
Some of the expanded universe story telling has been great and, as I mentioned earlier, the universe it takes place in is pretty awesome. Maybe the new movie will actually be a good one, but I don't have my hopes up unlike a lot of other people.
