My magical moat was painted by the greatest magical painter using magical paints and inks. Although it looks real and smells, feels real, it isnt real. There is a powerful illusion in place so that anyone who touches it will feel as if they are drowning, and suffocate. Any attempts to use a boat, or cross it will cause a hurricane to start (magically) and swallow up the boat and everyone in it. They will be dropped into a trapdoor built into the moat thats used to feed the monsters.

Ah that is the beauty of it. Hidden within the illusion, which is detectable. Is an indetectable spell that re-targets dispell magic to it, it then uses the dispell magic to activate it which fizzles, and then projects an illusion that shows the real illusion being dispelled on a sensory level. A perfectly undetectable illusion is now cloaked that even magic cant reveal...until it resets which happens after the buyer chooses to. He has a key for that.

Again its simple
You cast detect magic, and find an illusion
You cast dispell magic
It activates the hidden spell
The hidden spell forces the dispell on it.
It activates on a mundane item, such as a rock.
It projects an illusion that the spell worked and dispelled the illusion.
You think it worked, and walk in and die

Get a shit ton of territorial water nymphs to inhabit it, they keep it clean and beautiful while singing beautiful music, and anyone dumb enough to trespass ends up naked with there throat slashed at the bottom of it. Magical moat? That's a waste of space and just makes a huge eye sore. The ideal solution is to cast a 360* sphere around the castle. The sphere would act as a teleportation spell, meaning any person or animal trying to walk through is instantly teleported to the opposite side of the castle. The only way to avoid the annoying teleport is to have a special blessing placed upon you. Meaning that normal servants and family can pass through unaffected. Also, if someone just tried to drop a big weight on the castle there's other enchantments to deal with that buffoonery.

If you can see it you're doing magic moats wrong. The preferred method is to cover your castle in black paint and put a very powerful aura of "I feel really bad about this guys. I'm out" around the castle, meaning that most enemies will run away once they get close enough. If they manage to get through that it means they're dedicated to causing harm to the castle or its inhabitants and the castle wall's enchantments will do the rest.
