With that out of the way, welcome one and all. This is my second go at making and maintaining a quest thread, and I'm pretty pumped for it.
THE BASICS:
1) Dual-color at most to begin with, but I strongly feel like starting out mono would be better overall. I don't object to gaining more colors as we go on.
2) Uh...
3) There's a modest adherence to canon, and the thread will not at any point devolve into a hit-list of canonical characters or locations to murderhobo. I may flub on certain tiny elements, but otherwise it's gonna be plausibly occurring in the canonverse.

As a thought are Phoenixes Sentient on any plane?

I'm not entirely clear as to whether phoenixes possess souls or not. They look quite a lot like the red equivalent of angels; i.e. constructs of mana.
Since soul ownership is a requirement for spark possession (with a few exceptions, like having a powerstone built into you, that's how Karn does it), angels may not be able to possess sparks. Similarly, phoenixes.

Apparently the tarkir variety are not much smarter than a bird, so are ineligible for spark possesion. I'm going to assume that holds true for them on other planes as well.
On the plus side they can be trained (at least by people insane enough to ride giant death insects.)
