During each grapple or wrestling move, the Irwin gets to make a check. If every other party member or NPC thinks that wrestling the monster or enemy* is something no sane man would do, the Irwin immediately gains bonuses to grappling and wrestling this beast. The creature is unable to do anything as long as the grapple is in effect.
*Does not work on stingrays.

In D&D terms, probably a mid- to high-level ranger with professional-level skills in Knowledge (Nature) and Survival, with grappling and subdual as combat focus.
