Cells age and die because they have a preset limit of divisions and basically a killswitch built in. Cancerous cells do not have that killswitch and that's what's makes them bad. THey replicate much faster and don't die leading to tumors and such.
Take away the replication limit and make an entire body cancerous and you have unlocked immortality

That is nowhere near what cancer is. Cancer is a mutated abnormal shapes cell that doesn't do its actual job. Its an odd lump that just takes up more energy and nutrients that the average cell and produces, at an accelerated rate, more cell exactly like it. While it doesn't have a hayflick limit it also doesn't have a purpose other than to keep growing. Eventually this will kill the host as it requires more nutrients than the host can provide or it effects something vital.
