What is skeletons are actually solidified soulstuff? so if you could swap the skeleton of one person into the flesh of another, you'd effectively be swapping the soul and personality of the people?
And simiarly, if you create a skeleton from a mixture of the bones of multiple people/creatures you'll end up with an undead whose "soul" and "spirit" are all a mixed up and uncohesive mess, one unable to truly be sentient in the common sense of the term.

Obviously consuming the bones of another person or thing would obviously give you some amount of their spiritual power and essence - eating the skull of a great scholar could even give you some grasp of their knowledge or skill.
Though beware of eating too much of another's skeleton, for the human form can only contain so much skeleton, and so your own could be gradually dimished, rendering you unto a bone chomping ghoul or zombie, with no self only hunger for more to crack in your oddly white teeth.
Cows and lactating women would obviously be considered holy for the soul cleansing and strengthening milk.

Probably killing or disfiguring somebody, as the chances are low that the two skeletons would match. You'd have shit like a brain not fitting into a skull or arm bones being too short for the actual arm. I'm guessing stuff like lots of ripped flesh, broken bones, organs and muscles not being where they belong. If you'd still be alive, your body would be useless and you'd wish you had died. It'd be pretty gruesome.
