Our big war to take over a simple base from zombies backfired explosively (literally).
And so we decided the only solution to attracting zombies with an explosion. . .was an even bigger explosion.
And somehow in the madness of it all, it worked? The zombies are no longer headed for us, but there are a lot more of them and boy are they angry at everything, but not at us only thankfully.

There's no such thing as a "genuinely new and unique race" because nothing is ever completely original. However, your problem is very easy to fix : make up your own settings and lore. Even if you think you're bad at it, you'll at least create something that fits your taste.

You could play a more collaborative system and work with your GM to build the setting. I'm the GM for two Fate campaigns, and while I handle most of the worldbuilding because I'm autistic and obsessed with it, I have my players contribute lots of lore too. In one campaign they each wrote basic lore for their country of origin while I handled the specifics and connecting all of it, for example.

Why is it that whenever I decide to play a Paladin, everyone at the table gets pissy?

I personally love Paladins, too much potential for trope subversion, good roleplay, and interesting story. My favorite character I ever played was a rather unique Paladin, actually.

Because a 3d printer that makes minis of equal quality to GW's costs several thousand dollars.
Plus, it's not like you can just print assets from Dawn of War and expect them to turn out as tabletop-quality minis. Video game models don't have nearly the poly count needed for that.
Because the machines which are good enough to produce miniatures to GW's standards are extremely expensive, so there's no saving to be made.
Also GW have the convenience of an actual retail arm and produce a lot of stuff in plastic which many people like significantly better than the stuff 3D printers work in.
...and there are probably some people who feel bad about pirating a company's IP. Film studios still make big profits even though stealing their product is much easier.
