They care a lot more about the outcome in my opinion cuz every game adds onto their resumes for potentially getting drafted
The game is way faster since the defences aren't as good as in the pros (they aren't paid to work out, still have full-time classes, etc)
There's 100 years of history between some of the rivalries so even kids in small towns can feel like they're on top of the world for a day
Also because they're amateurs they tend to allow way crazier plays to happen so the highlight reels are so much better than the biggest nfl games

There are a lot more teams and teams and fan bases that share geographical territories, so there are a lot more genuinely heated rivalries (family members that went to different colleges in the same state, coworkers with different alma maters, people who couldn't get into a school and hate it for that reason)

When you go to a university, you feel a connection with your team.

There are more variations to offenses and more opportunity for some whacky shit to happen.

Rivalries are about 100 times better than NFL. There are always opportunities for banter with fans of rival schools.

There is more emphasis on not losing. In the NFL, you can lose like 6-7 times and still win it all. You have to be closer to perfect in college.

Well, I'm sure everyone has already said the passion behind it, but along with that, if you went to the university you root for, there is a special connection you have to the team, and you get a wonderful sense of pride when they win. It's better than watching an NFL team win, because anyone can just say they are a fan of an NFL franchise without living in the city, but for a college team, you go to school there, and the people on the field are your peers, and they are trying their hardest to bring honor and pride to the place you learn, live, and love. Not to mention the whole amateur aspect of the sport brings out more strategy and preparation, as coaches have to deal with the varying levels of talent on each side of the field, and come up with ways beat the other team, and since there is a tremendous gap between the talent of the players involved, innovations and new ideas are born which makes the game a whole hell of a lot deeper. What other sport can give you rag tag group of 3 star athletes and walk-ons find a way to upset a team assembled of the greatest athletes across the country, and not only bring their school pride, but also crush the hopes and dreams of the opposing school by dealing them a loss, which is very critical for a team's title hopes in college football, since they play one of the shortest seasons in major sports.

Basically, there are 5 major conferences that reign supreme over the college football world. These conferences vaguely represent geographic locations within the country, but due to money and all of the conference realignment in the past few years, there are a few exceptions to the geographic tie ins. These conferences are the Big 10(which ironically has 14 teams) who represents the midwest, the BIg 12(which ironically has 10 teams) which represents the southern/central United States, the SEC(14 teams) which represents the Southeastern United States, the Pacific 12(also called the Pac 12; they actually hve 12 teams) which represents the west coast, and the ACC(12 teams) which represents the eastern coast of the United States. These conferences are the power 5 conferences due to the schools within them being some of the largest and oldest schools with rich football history. The best schools the have dominated most of college football make up these conferences. A team's schedule generally consists of 8 to 9 games scheduled with conference opponents(depends on the size of the conference) and then the remainder of the games are out of conference(OOC) games, that are typically played against teams in the weaker conferences in college football, and even some from teams at the next division down. Usually a power 5 team will schedule another power 5 team at the beginning of the year before conference play starts, which brings some interesting games at the beginning of the season. There are a total of 12 games in the season, and after the twelve games have been played, it moves on to the post season. The postseason begins with conference championships, which are usually decided with a championship game. conferences with more than 12 teams are divided into two divisions and the team with the best conference record in each division play each other in the championship game.

After all of the conference champions have been decided, teams with a winning record are assigned to a bowl game. These are sort of a consolation prize for teams that managed to finish the season with at least 6 wins. There are several bowl games that take place from mid December to early January. Before the playoffs were introduced, the prestigious bowls primary served as a match up between the champions of each conference. These bowls are the Rose, Cotton, Sugar, Fiesta, Orange, and Peach bowls, which then be used to determine a champion based on these results. When the playoff arrived, there was less of a pristine to these bowls, so they dubbed them the "New Years Six" bowls(since all of them are traditionally played on New years or New Years eve), and each year between the six locations, two of the bowls rotate out on a location for one of the playoff games, while the remaining four match up the best teams that didn't make the playoffs. NFL teams have near 0 tradition. Every college team has multiple traditions.
Rivalries aren't manufactured in college. You have many teams that are >50 miles from each other and fan bases HATE each other. Families will get divided if one member goes to the wrong school.
NFL offenses are almost all the same. Colleges have a multitude of offenses at both extremes (air raid and triple option)
You can have a connection and in a way be a part of the team in college. You have no chance to connect with a team in the NFL
